Ollie Dixon is cooking for us this week. Her vegetarian quinoa dish serves 4 to 5 person. Here’s the recipe: • Preheat oven 350f / 180c • Grease cookie sheet with coconut oil • 2 medium sweet potatoes or 1 large sweet potato • 1/2 large red onion • 5 garlic cloves • 1 1/2 cup quinoa • Tbs fennel seeds • Tbs coriander seeds • 1/2 cup of cashews • Large handful of fresh coriander/cilantro • 1/2 cup of parmesan • 1/2 cup of cheddar
