Salcombe Gin, the luxury spirit which embodies an adventurous lifestyle on and around the water, is to release its first sloe & damson gin as part of the Salcombe Gin Voyager Series on the 1st November.

Developed in collaboration with iconic Portuguese wine-maker Dirk Niepoort, this Salcombe Gin Voyager Series release is named ‘Guiding Star’ after one of the famous Salcombe Fruit Schooners built in 1874.

The distilling team at Salcombe Gin and Dirk Niepoort have brought together their combined expertise in balancing and perfecting flavours and aromas to create an exceptional tawny port cask-finished sloe & damson gin, that elevates this festive tipple. Salcombe Gin created a new gin recipe as a base for the sloes and damsons, taking into account the residual sugar content of the fruit and handpicked botanicals which would complement the natural aromas and flavours whilst drawing out the fruit’s natural sweetness.

The sloes and damsons were macerated in the gin to draw out the natural aromas, flavours, sugars and colour of the fruit before the liquid was filtered and finished for three months in an 80-year-old tawny port cask that previously held Niepoort’s famous Colheita 1997 20-year-old tawny port.

Unlike most sloe gins, no sugar has been added to ‘Guiding Star’, with the natural sweetness coming from the lees in the port cask, creating an exceptionally well-balanced gin that has depth and body with a complex bitter sweet finish. The brick-red liquid has a strong backbone of juniper combined with classic combinations of rose petals, fresh orange peel and bitter almonds to enhance the handpicked fruit.

Angus and I worked together at our winery in Portugal to refine the recipe, choosing botanicals that would complement the complex aromas and flavours in our tawny port and to hand-pick the perfect cask for aging the liquid to ensure a perfectly balanced flavour that the Niepoort family are proud of.”

This Salcombe Gin Voyager Series release is the third of a collection of limited-edition gins developed in collaboration with iconic winemakers or world-renowned chefs.

S A L C O M B E  G I N  ‘C O L H E I T A  R O Y A L E’ C O C K T A I L   R E C I P E

Inspired by Niepoort’s cathedral like cellars in Vila Nova de Gaia, Portugal, this celebratory cocktail pays homage to the exceptional 20-year-old Colheita 1997 tawny port with which this limited-edition gin is entwined after ageing on the lees in the cask for a period of three months.

The Colheita Royale marries the classic autumnal flavours of sloes and damsons with the sumptuous Niepoort tawny port, freshly squeezed lemon juice, sour cherries, dark berries and crushed black pepper before being topped up with champagne for a truly celebratory cocktail.

I N G R E D I E N T S

50ml Salcombe Gin Voyager Series ‘Guiding Star’ developed with Niepoort
15ml Niepoort Tawny Port
15ml vanilla sugar syrup
15ml freshly squeezed lemon juice
6 drops Bittermans Burlesque bitters
1/2 pipette of foaming bitters
20ml champagne

 

T O  G A R N I S H 

Crushed freeze-dried blackberries

M E T H O D

Fill a coupe glass with ice and place to one side. Fill a Boston shaker with ice, add the Guiding Star gin, tawny port, vanilla sugar syrup, lemon juice and Burlesque bitters and shake vigorously for 10 seconds. Double strain the mixture into the empty half of the Boston shaker, discard the ice, add the foaming bitters and dry shake for a further 10 seconds. Empty the chilled glass and long pour the mixture through a double strainer. Top up with champagne and garnish with the crushed freeze-dried blackberries.
